Baked Clams

Tomato, white wine, thyme, orange, butter, garlic & tequilla

1 oz. unsalted butter
2 fl. oz. vegetable-oil
1/2 yellow onion
1/4 c white wine
1/4 c tequilla
1 sprig thyme
1/4 orange, quartered slices
3 cloves garlic

Heat the oil and butter together in a large pot on medium high heat.
Add the onion and garlic and sweat until translucent, be careful not to brown the garlic.
Add the tequilla and reduce by half, add the white wine and bring to a boil, add the clams, orange, thyme, and clams.

Bring to a simmer and place the lid on top, place in a 400 F oven until all the clams open.
