Brown butter sauce

Servings: 4
5 oz. unsalted butter
1 shallot
2 cloves garlic
2 Tbsp. parsley
1 oz. capers
½ tsp. soy sauce

 

Start by slowly heating the butter.

Mince the shallot, garlic and parsley together. Rinse the capers before rough chopping and adding to the mixutre. Add to a large pot.

Once the butter is a nice even golden brown color and smells like toasted nuts, pour over the minced mixture. This will start boiling quite vigorously. Add the soy sauce to stop the rapid boil.

Set aside until ready to serve.
