Butternut squash and arugula

2 oz. butternut squash
½ oz. arugula
butter
salt and pepper

 

Remove the skin and seeds of the butternut squash and cut into even dices of one inch.

Sauté on medium heat with butter until tender. Add arugula and toss together well. Season with salt and pepper before serving.
