Use roughly 3 parts potatoes, 2 parts beef, ½ part onion
1 Tbsp. vegetable oil
2 Tbsp. butter, divided
salt and pepper to taste
potatoes, coarsely diced
corned beef, diced or leftover bits
Quickly saute onions on pan with vegetable oil and butter in a hot pan.
Add salt and pepper to taste. Add potatoes and saute until there is a
little color. Add salt and pepper to taste. (Add leftovers and spices to
your preference.) Add corned beef.
In a second pan, fry an egg in butter in salt and pepper.
Place potatoe mixture on a plate and top with egg.
