Roasted mushrooms and potatoes

Servings: 4
1 oz. bacon
1 oz. button mushrooms (or any other mushroom you like)
2 oz. potato
vegetable oil
salt and pepper

 

Cut the potato into even pieces. Toss with vegetable oil, salt and pepper before spreading out flat onto a cooking sheet. Roast in a preheated 400° F oven for ten minutes.

Cut the bacon into even pieces and render over medium heat until nice and crispy without being burnt. Add the mushrooms and cook until tender. Season with salt and pepper as soon as they start releasing some liquid.

Add roasted potatoes at the end and serve.
