1 red onion
½ c. lemon juice
½ c. red wine vinegar
½ c. sugar
salt and pepper
Peel and slice the onion as thinly as possible.
Add lemon juice, red wine vinegar and sugar to a pot; bring to a simmer to dissolve.
Season with salt and pepper and pour over the sliced onions.
Let sit overnight to tenderize and season the onions.
