Preheat the over to 380°F.

Season the porkchops with salt and pepper. Sear them in a pan and place in a baking dish. Finish cooking the porkchops in the preheated oven until they reach an internal temperature of 145°F*. Pull out of the over and let rest for 2–3 minutes.

*Recently the USDA changed the recommended internal cooking temperature for pork from 160°F down to 145°F, but if you would like your pork more cooked, let rise to an internal temperature of 155–160°F. Always allow the pork to rest, letting the juices settle results in a superior product.
