Their performance during the practical session is observed and rated by judges from leading post-secondary colleges and universities, local chefs and restaurateurs.

Teams Participating in the Hospitality Knowledge Bowl demonstrate their knowledge of the restaurant and food service industry by a competing in a question and answer "Jeopardy" style event.

In the Management Case Study, students are tested on their communication skills and their ability to apply their knowledge of the restaurant and foodservice industry to practical situations.

Registration and Pre-Qualification

Registration and Pre-Qualification Purpose:

  • The ICA Invitational will be able to accommodate a total of 24 teams, due to physical limitations of the competition site.  If more than 24 teams submit pre-registration request, the pre-qualification may be used as an elimination platform.
  • The benefit of submitting information regarding the teams’ plan for competition 3 weeks prior to the competition are:
    • the “paper work” of the competition will be complete, thus allowing the team to concentrate on their culinary skills, team work, timing and presentation of their selected menu
    • to mentor teams and allow them to make suggested changes that would improve their opportunity to meet or exceed all standards in the competition

.

Registration and Pre-Qualification Procedure:

  • Teams will submit, on the forms below, their desire to participate in the Culinary Arts Invitational - Pre-Registration.  Team members can be changed after submission.  Team members do not have to be from the same high school, however, they must be sponsored by a high school teacher or industry mentor.
  • There will be a minimal registration fee of $25 per team.  This will help confirm commitment to participation in the Culinary Arts Invitational and cover some dministrative costs.  The registration fee of $25 is non-refundable, unless there are more than 24 teams pre-registered and teams are eliminated through the pre-qualification process.  Checks should be made payable to: ICA Invitational
  • Registration information Required: Registration form, Dish Requirement Form and check for $25
  • Pre-Qualification information OPTIONAL: Menu TemplateRecipe Template, and Menu Cost Template. These must be submitted on the official templates linked to this document.  No hand written entries will be accepted.
  • Registration and Pre-Qualification(optional) information must be postmarked, emailed or hard copy received by January 11, 2010 to the competition coordinator, Joellen Zuk (jzuk@mccneb.edu) or P.O. Box 540513  Omaha, NE 68154.
  • Pre-qualification information (OPTIONAL, only if submitted) will be returned to all teams by January 30th, 2010, thus allowing 3 weeks to adjust and fine tune their entries and prepare for the invitational.

INTENT TO PARTICIPATE - DUE December 7, 2009

This form acknowledges the Intent to Participate in the Invitational.  This form also allows each school to request a MCC Institute for the Culinary Arts student to help prepare and mentor the teams in the process of; menu planning, production, plate presentation and sanitation.  This is unique to the ICA High School Invitational, and was praised by the high school teachers last year.

Tools of the Trade

After meeting with culinary professionals, teachers and students who have participated in competitions, there are “tools” they have developed to help organize, document and communicate processes and procedures.

The forms listed below are for your optional use.  They are not required nor do they hold point value.  Our hope is that you will find these tools helpful, not only for this competition, but for other events as well.

Budget Worksheet – Used as a budget tool and documentation for income sources to support participation and expenses involved in the process

Dry Ingredient List – A format to list all dry ingredients for the check in process

Refrigerated/Frozen Ingredient List - A format to list all refrigerated/frozen ingredients for the check in process

Timeline – This can be used to assign/delegate tasks and communicate time requirements by task, to meet the time restraints of the competition.

All of these forms can be customized to the competition you are participating in, by simply going into View, Header & Footer, Custom Header  - and insert the name of the competition you are entering.

Thanks for your interest and participation in the ICA Culinary Invitational.  We look forward to having you be a part of this exciting event!
